Ingredients (Makes Five cups)
1 chopped onion
2 tablespoons of olive oil
3 sliced garlic cloves
2 cups of well chopped Portobello mushrooms
1/4 cup of garden-fresh sliced up parsley
1 little cauliflower grated on large holes of box grater
1/2 cup of Greek yogurt
1/2 teaspoon of sea-salt
Fresh ground-pepper
3 tablespoons of parmesan
Directions
In a big saucepan, heat the oil, add onions and cook for around 5 minutes until translucent.
Add in garlic and cook for few seconds until good smelling.
Add cauliflower, cook for Five minutes  and stir often until it become softer.
Add the fresh mushrooms together with pepper and salt, and cook for more 3.5 mins.
Switch off the heat, and add in the Parmesan and greek yogurt, mix with the sliced parsley.
