1/2 cup of oat flour
2 tablespoons of light brown sugar
1/2 cup of all purpose flour
1/2 teaspoon of salt
1 teaspoon baking powder
2 big eggs
3 blended bananas
2 Tablespoons of butter milk or non fats sour cream
1/8 teaspoon of nutmeg
Milk (add to your preferred structure)
1 tablespoons of cooking butter
In a bowl, Mix all of the light brown sugar, all purpose flour, baking powder, oat flour, nutmeg and salt .
Stir the buttermilk or sour cream with the blended bananas and eggs .
Add a few tbsps of milk, If you found that the mixture too thick.
Over low to medium heat, Pre-heat a non stick pan .
Apply butter to a paper towel and wipe on the bottom of the pan….Remove extra butter with the exact same paper towel to use it again when cooking your next pancake.
Pour some batter in the pan using your ladle.
Flip pancake once the pancake underside turns golden brown, and continue cooking until its inside is no longer wet.
Keep it hot until all of the pancakes are ready.
Serve with maple syrup, and topped with chopped apples.
-I prefer to use U.S grade C maple syrup as it has more darker color and a strong flavor.
-Cooking in any non stick pan enables you to use butter reasonably.
-You can simply prepare your very own oat flour by blending rolled oats in a blender until fine.
-If you’re making the batter a night before, don’t add your baking powder until right before cooking. This will make the batter a bit dark, but is going to be more delicious.
