This delicious meal is a nice variation of the traditional lasagna dish. Who would’ve thought that the tangy taste of lasagna could be captured in a dish so compact. each lasagna log makes up one serving, so prepare as many as it takes for your family size. However, once they taste these delicious treats, they’ll be begging for more.
Dr Oz: Lasagna Roll-Ups
- 2 whole wheat lasagna noodles
- 1 garlic clove
- ½ cup ricotta cheese
- ¼ cup mushrooms
- ½ cup spinach
- 1 ½ tbsp extra virgin olive oil
- ½ cup diced zucchini
Boil noodles until soft. Layout the noodles and distribute half the ingredients on each. Start with the minced garlic, followed by the ricotta cheese.then the spinach, mushrooms and zucchini.
Then, starting from the bottom, carefully roll up each noodle, place in a small baking pan, sprinkle with olive oil, and bake at 350 degrees for about 20 minutes.
