Super Cheese Veggie Omelet:
The following ingredients will be needed for this recipe:
- 2 whole eggs
- 2 egg whites
- 1 cup of spinach
- 1/2 cup of tomatoes that have been diced
- 1/2 cup of mushrooms
- 1/2 cup of avocado that has been diced
- 1/2 cup of shredded low-fat cheese
- 1 slice of 100% whole grain toast
Scramble the egg whites and whole eggs together before adding them to a pan, cooking over a medium flame heat. Next, add the spinach, avocado, tomatoes, mushrooms, and cheese on top of the egg mixture on one side of the pan. Fold the other side of the egg mixture over the top, heating until the egg mixture is fully cooked.
