Total Choice Lentil Soup With KaleThe lentil kale soup recipe is full of nutritious flavors, low in calories and it is very easy to prepare. Dr. Oz: Crock-Pot Lentil and Kale Soup

The following ingredients will be needed for this recipe:

  • 2 cups of onions that have been chopped
  • 1 1/2 teaspoon of fresh garlic that has been minced
  • 1 cup of red lentils
  • 2 cups of chopped white-part-only leeks
  • 1 1/2 teaspoon of black pepper
  • 1 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of cumin
  • 1 1/2 cups of celery that has been chopped
  • 1 1/2 cups of carrots that have been chopped and peeled
  • 2 cups of sweet potatoes that have been diced
  • 3 cups of tomatoes that have been chopped OR 1 28-ounce can of chopped tomatoes
  • 6 cups of low-sodium vegetable stock
  • 1/8 cup of tomato paste
  • 4 tablespoons of balsamic vinegar
  • 1 1/2 tablespoon of hot sauce
  • 3 cups of kale with the ribs removed, chopped, and blanched


Using a low flame heat on a stove top, dry sautee the onions until they appear transparent in color. Next, add the garlic and cook until it becomes fragrant. Next, place the onions, garlic, and all remaining ingredients into a crock-pot. Mix and stir them well before covering and cooking for approximately 4 hours on high temperature.

This recipe produces a serving size of 1 1/4 cups.
